   About Hika

Hika Txakolina is a contemporary winery located in the heart of the Oria Valley in Gipuzkoa, Basque Country. Established in 2016, the winery is surrounded by 7 hectares of vineyards that overlook Mount Ernio, offering a picturesque landscape unique to the region.

The vineyards are planted on slightly acidic, clay-loam soils and are arranged on slopes to ensure optimal drainage and aeration. This setup, combined with trellis-trained vines—a rarity in the D.O. Getariako Txakolina—maximizes sunlight exposure, promoting better grape ripening. The winery practices sustainable viticulture, avoiding herbicides and fostering a microclimate that minimizes fungal development.

Hika cultivates both indigenous and international grape varieties, including Hondarrabi Zuri, Hondarrabi Beltza, Chardonnay, and the recently introduced Hondarrabi Zuri Zerratia. The winery employs advanced winemaking techniques, such as the Bucher Inertys press and the Oresteo system, to prevent oxidation and enhance the aromatic potential of their wines. This approach results in txakolis that are fresh, elegant, and capable of aging gracefully.

Beyond winemaking, Hika offers wine tourism experiences, including guided tours of the vineyards and cellar, as well as tastings of their diverse wine portfolio. Visitors can also enjoy Basque cuisine at the on-site restaurant, HIKA by Roberto Ruiz, which emphasizes local products and traditional dishes.
